Since opening in May 2023, the business has built a loyal following through its focus on quality ingredients, handcrafted food and a welcoming customer experience.

The idea for Two Slices was inspired by co-founders Madison McGlinn and Jacob Spasevski's travels through Europe, where they spent their time enjoying freshly made sandwiches from local delis and cafés.

"We came back from Europe wanting a handcrafted gourmet sandwich and felt inspired to create our own," Madison says.

Bringing that inspiration to Perth, the team introduced a build-your-own sandwich concept centred around freshly baked schiacciata bread, premium meats, cheeses, house-made spreads and fresh herbs grown in-store. Customers can customise their order while watching their sandwich being prepared fresh in front of them.

Building a business in Scarborough

Choosing Scarborough as their first location was a natural decision.

The founders were drawn to the area's accessibility, vibrant beachside lifestyle and strong sense of community. Situated just a short walk from Scarborough Beach, the store has become a popular meeting place for locals, beachgoers and workers looking for a quality meal in a relaxed setting.

"We saw an opportunity to create a fast-casual venue where people could catch up after the beach, grab lunch during the workday or start their weekend with a great coffee and breakfast sandwich," Madison says.

The business's made-to-order approach has also helped set it apart, allowing customers to enjoy fresh ingredients and a highly personalised experience.

Growing through community support

Like many growing businesses, Two Slices has faced challenges along the way.

One of the biggest has been keeping up with demand as the brand's popularity has continued to grow. From social media exposure to collaborations with food creators and the launch of a second store, the team has focused on refining its systems and processes to maintain consistency and quality.

The business has also embraced opportunities to support the wider community during challenging times. During recent fuel shortages, Two Slices offered free coffee to anyone who needed it, helping provide a small act of kindness while many households were feeling the impact of rising costs.

The initiative received an overwhelmingly positive response and reinforced the team's commitment to looking after the communities they serve.
